      Super heating is heating above the melting temperature. For example, iron melting temperature is 1540°C. If you heat that to 1560°C, that means that liquid is super heated to 20°C. Super cooling means cooling below melting temperature but still it is in liquid form. It is also called undercooling. TRead more

            undercooling is when the temperature is just below the melting temperature to release the latent heat for solidification. supercooling is when the cooling rate is very high such that liquid particles will not get sufficient time to arrange in period arrangement and upon solidification remains randomRead more

              Releasing of latent heat during undercooling is known as recalescence. I think you are referring this thing as undercooling.

          I don't know how to differentiate exactly. But by cooling faster we can retain liquid structure below its freezing point. That means we can achieve undercooling effect by cooling fast.
