These two terms are related to diffusion mechanisms. Interstitial means one foreign atom occupies the void position in the lattice and Interstitialcy means one atom pushes another atom to the void position in the lattice.

Interstitial means one foreign atom will occupy one void position in the lattice and that void position is not a vacancy in the normal lattice site. And interstitialcy means one atom from the normal lattice site will go to the institial position.
